Blueberry muffins (no flour, no added sugar)

Today I'll be posting a recipe I have just experimented with... Blueberry protein muffins! I'm sharing them as I think you'll love them just as much as me. They are so easy, so quick, and so effortless, yet taste absolutely amazing! Don't believe me? Well have a look for yourself....

Blueberry muffins;
Now these are no ordinary muffins. The average muffin, the ones you get from your local coffee shop or supermarket will cost you around 400 calories and they are also packed full of added sugars (around 7 teaspoons worth). Ridiculous isn't it!? See how mine compare...

For these you will need the following;

8 Muffin cases (I used silicone cases. You can get 12 for about £4. They are great!)
1.5 scoops of whey protein powder (I use true whey from +Myprotein)
50g oats
2 ripe bananas (mashed)
2 eggs
0.5 tsp baking powder
1/3 cup fresh blueberries


Step 1;
Preheat oven to 180 degrees Celsius.

Step 2;
In a mixing bowl, add oats to your mashed bananas. Then add the whey protein. Combine.

Step 3;
Add the eggs to the mixture and mix well. Add baking powder.

Step 4;
Add a few blueberries to all the muffin cases, and full them up half way with your mixture. Add more blueberries, then fill up with the rest of the mixture.



Step 5; 
Place into the oven for around 20 minutes at about 180 degrees Celsius.



Step 6;
Take out the oven, place on a wire rack to prevent the muffins going soggy (I forgot to do this).



Step 7;
Enjoy!



These make a handy snack for whenever you are short of time, or busy at work. They also taste amazing. You could always add in a tsp of honey into the mixture to sweeten them if you like, although I believe the bananas do the trick just fine!
They are a good source of complex carbs and protein, making them a good snack to eat pre-workout!

Dark chocolate chips
Dried cranberries
Pumpkin seeds
Crushed almonds
